White Truffle Risotto in a crunchy Parmigiano Reggiano Bowl
This is the perfect recipe for the upcoming holiday season to impress all of your friends and family with an Italian favorite!
Parmigiano Bowl
5 ounces of grated parmigiano reggiano
Risotto
4 tablespoons of Extra Virgin Olive Oil
2 thinly sliced shallots
6 oz. Arborio rice
1/2 cup of dry white wine
2 3/4 liters of vegetable stock
3 oz. of aromatic truffle butter
8 oz. of grated parmigiano reggiano
4 oz. of raw Alba white truffles
Take a 5 inch teflon pan and place over medium heat until hot. Place 2-3 ounces of grated parmigiano on top and spread evenly, cook for about 2 minutes until golden. With tongs remove the parmigiano and place over an upside down 5-inch bowl and shape with hands to form your parmigiano reggiano bowl.
For the risotto take a large pot and add extra virgin olive oil over medium heat. Once hot add the shallots and cook until golden brown, then add the rice and toast until lightly brown and the bottom of the pot becomes sticky, then deglaze with the white wine. Reduce the white wine over medium to low heat and once dry, add the vegetable stock one cup at a time over low heat, stir constantly, let the rice absorb the broth, until cooked. When rice is nearly finished, add a little olive oil, the grated parmigiano, and the aromatic truffle butter.
To serve place risotto in parmigiano bowl and shave the truffles with a mandolin over the top!

"Parliamo Italiano" is an extra fun and free opportunity for students who are interested in practicing their Italian, and also meeting other members and friends of the Italian Institute. Our students and friends can speak and practice Italian in a very relaxed fun environment, and share their passion for the Italian culture and language...all in Italian!
Take this opportunity to brush up on your Italian, every third Friday of the month. We will be meeting at the Italian Institute from 5:30 p.m. to 7 p.m. We encourage you to bring your favorite Italian dish or wine to share (Pot-luck).
Students should have a basic foundation of the Italian language.

An Evening in Puglia & Salento
